ugh..i feel sick
i'm having this headache..at least i THINK i'm having a headache..i don't really know why though..i REALLY REALLY don't..but in any case..i've gotta cook dinner tonight!! LAST TIME i'm going to cook dinner till my holiday ends..haha in australia at least...talking about dinner..haha i've come up with my own recipe again..another one of those strange conocotions that my dad can't even imagine..i shall call it
EGGPLANT and SPAGHETTI SAUCE BAKE
as a side dish this recipe will probably serve 2
Ingredients:
1/4 eggplant (the egg plant in Australia's huge, but it depends on how many people are eating)
1 green apple (can add more if you like apples)
1 slice of cheese (doesn't matter what kind of cheese as long as it's cheese, put as much as you want)
Thousand island dressing
SAUCE:
2 Tablespoons of Spaghetti Sauce
1 teaspoon of olive oil
1 teaspoon of balsamic white vinegar
1 onion (peeled and chopped)
2 Tomatoes (Chopped)
Herbs (either salad herbs or basil and nutmeg)
2 cloves of garlic
( you can add meat into the sauce if you like, but it's not really much point though)
Method:
1. Cut the eggplant in anyway that you want it really, cubes, wedges anything. Line it on a baking dish and pop it into the oven till it turns a little brown. Take it out after that.
2. Cut the apples into cubes, slices or wedges and placed it together with the already baked eggplant.
For the sauce,
Hit up a pot, add the oil and ensure that it's hot enough before adding the garlic.
Next add the onions and tomatoes, frying it altogether until they're almost cooked.
Add the baslsamic white vinegar, tossing it and then add the spaghetti sauce.
Add the herbs in
Once the sauce is cooked, pour it on top of the the baked eggplant and the apples.
i don't know if sprinkle's the word, but yah just cover the spaghetti sauce with a little thousand island dressing..don't overcoat it..just a little.
then add the cheese on top of it, pop it back into the oven, and wait till it warms up and the cheese melts and it's ready to be served!!
You could cover it with aluminium foil if you don't like constantly watching it, that way it won't get burnt=)
the reason why there's no specific temperature for the oven's coz' it really depends on you. Feel it to put it in another way.
i hear mean people laughing at all the veggies..i'm not going to care anyway. Eating it late will shut them up!
in any case, it's the 31st of MAY already..which leaves me 21 more days till the end of my exams, till i can go home..which also means that from tommorrow onwards i CAN start packing my bag, or my suitcase at least *YAY*
The sun's out today=)but to account for the autumn weather, we got really strong winds instead, so strong that i couldn't walk in a striaght line..i went to run and i felt like i was undergoing resistance training!!!haha..BUT i thought it was really really funny doing it..the whole notion of running on the spot in the middle of the street was quite hilarious..i thought it was anyway..oh yes and i think all my chocolates have exceeded how much exercise i do..but as to whether i've lost weight..i'll wait till i get back and let my parents decide for me=)i can already taste the cai tau kuey, the ya kun kaya toast, the fantabulous hazelnut latte, roti prata and ice-kopi, flaming lambroghinis, can already imagine the baking that i'm going to do, the music in ZOUK, the hot and humid weather in singapore..it's already calling and beckoning..COME YANS COME..haha
quite funny when you think of it that way yah=)
